Daffodil Pasta:
1/2 pkg. penne pasta, cooked
handful (2c.) baby spinach leaves
1 (or 2) gloves garlic
1/3 c. grated Parmigiano Reggiano cheese
1 lemon
1-2 T. olive oil
salt and pepper
1. Cook pasta according to package directions.
2. Pulse spinach and garlic in food processor until finely chopped.
3. Pour in olive oil and juice from half a lemon until mixture becomes a pesto consistency.
4. Stir in grated cheese. Add salt and pepper to taste.
5. Toss with warm pasta and grate additional cheese over top.
6. Serve with lemon twists if desired.
7. Double recipe to feed a large family.

Sounds yummy! I don't have a food processor. It is on my wish list.
You could use your blender....that's what I did.

Speaking of things that are delicious, someone just sent me the perfect additive to any meal! A little bacon salt is JUST what that recipe needs!
Yum...I'll have to try this recipe soon! I'm always looking for an excuse to break out the food processor;) Gotta love wedding gifts!!!
