Ono Banana Cake


This is the best banana cake ever. And I got this recipe from my bestest, goodest homie, Michelle. She brought this cake to a Memorial Day luau that we had and she was sweet enough to bring the recipe too. This cake is moist and so very good. You have got to make it. Scott is on a diet right now and if I made it, well, that just wouldn't be very nice of me!


Banana Cake:
3/4 c. butter softened
2 c. sugar
3 eggs, beaten
2 tsp. vanilla
3 c. flour
1/4 tsp.salt
1 1/2 c. butter milk or sour milk
2 tsp. lemon juice, to keep the mashed bananas from turning brown
1 1/2 c. very ripe bananas, mashed

Cream butter and sugar together. Add eggs and vanilla. In another bowl combine the dry ingredients. Mix well. Combine the two bowls together, adding the butter milk. Finally, stir in those rotten bananas! Butter a 13x9 baking dish. Bake in a 275 oven for one hour. Once removed from oven , cover with tin foil and place in freezer for about 20 min. allowing it to cool but also making it super moist. Next, you're gonna wanna frost da thing.

Da Frosting:
1 8 oz package cream cheese, softened
1/2 c. butter, softened
3 c. powdered sugar
1 tsp. vanilla

Mix all of the above very well, don't leave any lumps in there. Frost the ono banana cake. And now, if you like, sprinkle some nuts on top. Walnuts are nice, but I like pecans best.
