Preserving the Harvest


Cardamon Ginger Rhubarb Sauce

I was given 12 pounds of rhubarb this weekend! Thanks, Beanball! What do you do with 12 pounds of rhubarb? Make some yummy rhubarb sauce and can it of course! There is something so satisfying about growing your own food and then storing it away for later. I also plan to make Strawberry Rhubarb Jam with this recipe:

2 1/2 cups strawberries
1 1/2 cups rhubarb
2 1/2 cups sugar
1 8oz. can crushed pinapple
1 3oz. box strawberry jello

Combine in large pot the berries, rhubarb, sugar and pinapple. Boil, reduce heat, and simmer 20 min. Remove from heat and stir in gelatin until dissolved. Pour into freezer jars. Refrigerate or freeze. Sounds good, huh?

Basket of Zucchini '09

As stated before, my zucchini is out of control this year. I have been keeping a tally of just how many zucchini that have been harvested. And to date I have picked 12 regular, dark green kind, and 6 Apple Globe type. Amazing. Last year I got 1. One stinking zucchini. Today I'm making a batch of Spicey Zucchini Relish. :O)

Looks Yummy! I just made 12 half pints of Strawberry Jam last week. I plan on canning some Salsa as soon as my "maters" and peppers are ready. Home Making is fabulous, isn't it?
I plan on growing some fruit trees too. That is, IF I can get them to grow! HA!

Good for you!!! You must have had a burst of energy. 'Course I guess it helps to have the pressure of leaving for Hawaii in a couple of days.

Your zucchini looks so pretty! Never seen those globe kind. Are they good? Do they taste like regular zucchini?
